This extremely light and fruity raspberry infused chocolate mousse is a real treat! They are super easy to whip up and with every bite, you get the wonderful dose of dark chocolate sweetened by the freshest of raspberries. They are wonderfully indulgent and surprisingly healthy!
The aim with most healthy versions of traditional recipes is to make them taste as good as the original while retaining the integrity o the dish – and boy does this one deliver. Instead of using copious amounts of sugar this recipe is mostly sweetened by the raspberries.
They are perfect for a dinner party dessert or for any romantic occasion. Top them off with more fresh fruit, greek yogurt, whipped cream or extra chocolate shavings.
For best results use between 70% – 80% dark chocolate!
Add the raspberries to a large saucepan with a splash of water and the sugar. Cook until the berries have broken down and the liquid has reduced.
Pass the raspberries through a sieve until only the seeds are left. Set aside for later.
Boil water in a small saucepan and put a metal or glass bowl on top, making sure the water does not touch the bowl. Break up the chocolate and add the pieces to the bowl. As the chocolate melts stir occasionally.
Once melted allow to cool for a few minutes then add the yogurt and the raspberry sauce.
Whisk the egg whites into stiff peaks
Add a large tablespoon of the egg white to the melted chocolate stirring quickly. Gently fold in the rest of the egg whites with a spatula.
