The nutritional values of smoked salmon
Smoked salmon contains 117 calories per 100 grams of product, is rich in proteins but also in salt, and for this reason, it is not recommended to consume in large quantities, and in particular by those who have to limit the intake of salt in the diet. Salmon is a very fatty fish, but most of what it contains are useful for reducing bad cholesterol and increasing good cholesterol. It is still a source of mineral salts among which phosphorus, calcium and iron stand out.
Smoked salmon in pregnancy
The consumption of smoked salmon during pregnancy deserves a mention, strongly discouraged for those who are pregnant due to cold smoking, to which Listeria monocytogenes is potentially linked. This is responsible for listeriosis, a disease that those who are pregnant can contract.
Smoked salmon in the kitchen, recipes and pairings
Smoked salmon is widely used as an appetizer. Alone or together with other foods, such as smoked swordfish, octopus carpaccio and shrimp cocktail, it offers precious gourmet appetizers that serve to open festive fish menus. But it also lends itself to “everyday” cooking: among the courses with pasta, the farfalle with salmon are excellent; among the main courses it can be paired with boiled potatoes – with which it goes perfectly and with which it can create a delicious salmon and potato pie. By its nature it lends itself to both hot and cold recipes: among these, it is combined with pasta and rice salads or used to make rolls filled with cream cheese. Finally, among the perfect combinations, as well as with potatoes and avocado, it goes well with spinach, broccoli and zucchini.
Smoked salmon, how to season it?
To best season smoked salmon, as well as with extra virgin olive oil and a sprinkling of freshly ground black pepper, you can opt for flaked butter, light mayonnaise, balsamic vinegar or pink pepper. The yoghurt sauce is irreplaceable.
