Nothing is better than homemade soup as the cold weather creeps in. This beautiful carrot and ginger soup is exactly what you need to weather the colder months! It’s flavourful, healthy and completely vegan.
Carrots are packed full of health benefiting nutrients. They are a really good source of beta-carotene, fibre, vitamin K, potassium and antioxidants. Ginger also has strong anti-inflammatory and antioxidant qualities.
This recipe is simple and quick to make with or without a kitchen machine! We recommend serving it with some freshly cut sourdough bread and finish off with a generous sprinkle of parsley or almonds.
Chop onion and garlic.
Heat oil in a large saucepan and fry the onion and garlic.
Pour in the stock and add the carrots, potatoes, ginger, and nutmeg. Cover with a lid and simmer until the carrots are tender.
Take the pan off the heat and blend with a hand blender.
