Simply heat the pan and add a generous ladle of the mixture, leave until the top begins to bubble then turn over with a spatula to reveal a beautifully browned pancake. In a large bowl, add the flour, baking powder, cinnamon, sugar, salt, egg, milk, melted butter and vanilla extract and whisk well.
Take a non-stick frying pan over and put it on a medium to high heat.
With a ladle add a small amount of mixture to the pan, allowing the mixture to spread by itself.
Cook for about 2-3 minutes until bubbles start to appear on the surface, then flip the pancake over and cook for an additional 1 minute.
Stack the finished pancakes on a plate and serve with maple syrup.
