This healthy version of a Spanish omelette is so good you won’t feel guilty for going back for second helpings! The ingredients are simple – like most good hearty food – potatoes, onions and eggs with a pinch of salt for taste and dash of olive oil.
It’s great both hot or cold, serve it with a fresh salad for a delicious light lunch.
This low-fat version is made by steaming instead of frying. Make sure to use waxy potatoes like Charlotte, Maris Peer Jersey Royals.

Chop the onion in half and slice finely. Quarter the potatoes and cut into 3 mm pieces.
Take a large frying pan and heat the olive oil over a high heat.
Add the onions and the salt to the frying pan and caramelise. Stir occasionally.
Add the potatoes to the onions and continue cooking until golden brown. Stirring occasionally.
With a slotted spoon remove the potatoes and onions from the pan.
Crack the eggs into a large bowl add the potatoes and onions. Mix together and cover with a dishcloth. Leave to rest for 15 minutes.
Take the steamer basket and line it with baking parchment.
Remove the steamer basket from the pan and remove the omelette from the basket.
