This healthy version of a Spanish omelette is so good you won’t feel guilty for going back for second helpings! The ingredients are simple – like most good hearty foodpotatoes, onions and eggs with a pinch of salt for taste and dash of olive oil.

It’s great both hot or cold, serve it with a fresh salad for a delicious light lunch.

This low-fat version is made by steaming instead of frying. Make sure to use waxy potatoes like Charlotte, Maris Peer Jersey Royals.

Step nr: 1 - Chop vegetables

Chop the onion in half and slice finely. Quarter the potatoes and cut into 3 mm pieces.

Step nr: 2 - Heat pan

Take a large frying pan and heat the olive oil over a high heat.

Step nr: 3 - Caramelize onions

Add the onions and the salt to the frying pan and caramelise. Stir occasionally.

Do not add the potatoes at this stage as they will stop the onions from caramelizing properly.

Step nr: 4 - Add potatoes

Add the potatoes to the onions and continue cooking until golden brown. Stirring occasionally.

Step nr: 5 - Remove onions and potatoes

With a slotted spoon remove the potatoes and onions from the pan.

If you want to remove even more oil add the potatoes and onions to a sieve with a bowl underneath and leave for a few minutes.

Step nr: 6 - Add eggs

Crack the eggs into a large bowl add the potatoes and onions. Mix together and cover with a dishcloth. Leave to rest for 15 minutes.

Resting the mixture will make the eggs less runny, making it easier to steam. It will also allow more flavour will develop.

While the mixture is resting fill a saucepan with water and bring to a boil.

Step nr: 8 - Line steamer

Take the steamer basket and line it with baking parchment.

Scrunch the baking parchment up before lining the steam basket, this will allow you to line the steamer basket easier.

Step nr: 9 - Steam

When the water is boiling add the mixture to the steamer basket then place it on the pan with the lid on.

Remove the steamer basket from the pan and remove the omelette from the basket.
