I think everyone has experienced the disappointment of raiding the kitchen for a snack only to find that your cupboards are bare and all you have are some browning bananas. Well, hopefully, this recipe will turn your mystery into glee because there isn’t anything else quite like freshly baked banana bread!
As you may have already gathered, you need overripe bananas for this recipe, green will just not do! This is because you want to be able to incorporate them easily into the mixture, fresher bananas will not mash well and you will end up with lumpy banana bread.
Banana bread makes a great snack or dessert! It’s great served with some fresh fruit or some yogurt on the side.
Preheat oven to 350F/180C/Gas 4
Butter and line a loaf tin.
Mix flour, baking powder, baking soda, and salt.
Add the eggs and vanilla, sugar, butter and bananas, beat well.
Pour the mixture into the loaf tin and sprinkle the top with the turbinado sugar.
Bake in the middle of the oven.
Remove from oven and leave to cool slightly in the tin.
Remove from tin and leave to cool fully on a wire rack.
