Banana bread is the one cake recipe everyone should know how to make. It’s super simple, economical and it prevents your bananas from going to waste! What more could you want?

I think everyone has experienced the disappointment of raiding the kitchen for a snack only to find that your cupboards are bare and all you have are some browning bananas. Well, hopefully, this recipe will turn your mystery into glee because there isn’t anything else quite like freshly baked banana bread!

As you may have already gathered, you need overripe bananas for this recipe, green will just not do! This is because you want to be able to incorporate them easily into the mixture, fresher bananas will not mash well and you will end up with lumpy banana bread.

Banana bread makes a great snack or dessert! It’s great served with some fresh fruit or some yogurt on the side.

Ingredient list

Unsalted butter 85gmelted
Egg 2units
Banana 3unitsripe and mashed
Vanilla extract 1TSP (UK)
Cinnamon 1TSP (UK)
Baking powder 2TSP (UK)
Salt 0.5TSP (UK)

Step nr: 1 - Preheat oven

Preparation time 30 Seconds

Temperature180 Degrees Celsius

Preheat oven to 350F/180C/Gas 4

Step nr: 2 - Prepare the tin

Butter and line a loaf tin.

Plain Flour 130gram
Baking powder 2teaspoon (UK)
Bicarbonate of soda 0teaspoon (UK)
Salt 0teaspoon (UK)

Mix flour, baking powder, baking soda, and salt.

Step nr: 4 - Add other ingredients

Caster sugar 115gram
Egg 2units
Banana 3units
Vanilla extract 1teaspoon (UK)
Cinnamon 1teaspoon (UK)
Preparation time 4 Minutes
Total time 4 Minutes

Add the eggs and vanilla, sugar, butter and bananas, beat well.

Step nr: 5 - Pour into tin

Pour the mixture into the loaf tin and sprinkle the top with the turbinado sugar.

Bake in the middle of the oven.

Step nr: 7 - Leave to cool

Remove from oven and leave to cool slightly in the tin.

Remove from tin and leave to cool fully on a wire rack.
