This pasta dish is packed full of vegetables; carrots, onion, celery, courgettes, peppers and mushrooms. Lentils are high in protein, nutrient-rich and they release energy slowly helping you to sustain energy levels. This can make you feel fuller for longer which may aid in weight loss.
The ragu freezes really well. The best way to store it is to divide the sauce into portion sizes and freeze them individually in freezer bags. Making sure to get rid of any excess air, seal and label with the cooking date for up to 3 months!
You can also use other pasta such as fettuccine, spaghetti or linguine.
Finely chop onions, carrots and the celery. Chop courgettes, peppers and mushrooms and set aside.
Add the oil to a large saucepan and heat over a medium heat. Add the onions, carrots and the celery and fry until soft, stirring continuously.
Add the garlic, tomato purée and red wine vinegar, cook on a high heat.
Add the courgettes, peppers and mushrooms, lentils, and canned tomatoes, bring to a simmer.
Season the sauce with salt and pepper to taste.
In a large saucepan boil water and salt well. Add the tagliatelle to the pan and cook following the instructions on the packet. When cooked drain the pasta and add it to the ragù mixing well.
