You will not be able to tell the difference with these gluten-free brownies. They are the decadent, gooey, mouthwatering brownies of your dreams.
This super simple recipe takes no time at all and with or without a kitchen machine, you will be shocked at how easy they are to make.
When you are in the shops, reach for a dark chocolate with at least 70% cocoa. You will be thanking yourself later as it will increase the flavour of your brownies tenfold!
They are impressive enough on their own but they look amazing with a fine dusting of cocoa powder to finish them off.
Pre-heat the oven to 180° C.
Butter the baking tray and line the base with non-stick baking parchment.
Fill the saucepan a third of the way with water. When simmering place a heatproof bowl on top, making sure that the bottom of the bowl is not touching the water. Add butter and dark chocolate to the bowl and melt over a low heat, stirring occasionally with a spatula.
When melted together remove from the heat and leave to cool slightly.
In another bowl mix the eggs and sugar together.
Gently fold the melted chocolate into the egg and sugar mixture. Then add the vanilla extract, followed by the flour and cocoa.
Pour the brownie batter into the lined tin. Place in the centre of the oven and bake.
Remove the tray from the oven and leave to cool a little in the tin.
Cut into squares. Finish off with a dusting of cocoa powder.
